Lemon Pudding Cake in a Cup Recipe

What is lemon pudding cake?

Lemon pudding cake, unlike regular puddings, includes flour as thickening agent. Doing so results in a creamy cakey treat.

This is a super simple recipe for a super delicious lemon pudding treat. The recipe follows a video below. Check it out. You'll need 6 standard size ramekins, but you can try it in a cake dish without dividing up the batter.

Lemon Pudding Cakes in a Cup

Ingredients:
  • 1 stick Butter (Melted)
  • 3 Eggs
  • 1 1/2 Cups of Fine Sugar (aka caster sugar)
  • 1/2 Cup of Self Raising Flour
  • 1/2 Cup of Lemon Juice
  • 1 1/3 Cups of Milk
Directions:

1. Preheat oven to 350 deg F. Boil a medium pot of water.

2. In a small-to-medium mixing bowl, add melted butter, sugar and 3 eggs. Mix well.

3. Add self raising flour and lemon juice. Mix well.

4. Slowly add milk while continuing to mix until all used up.

5. Grease the ramekins with butter. Hopefully you have more than just the 1 stick required. Use olive oil if you have no more butter or perhaps dust it with fine sugar, if you have any left.

6. Place the ramekins on a baking dish. They should all fit in a standard 9x13 inch baking dish size.

7. Divide the pudding cake batter among the six ramekins. Add boiling water onto the baking dish up to haflway up the sides.

8. Place baking dish with ramekins inside oven and bake for 1 hour or until the pudding cake has risen.

9. Remove from oven. Allow to cool for 10-15 minutes before serving.
