How To Make Easy Lemon Curd For Pies, Cookies, Cheesecakes And Other Homemade Baking

Lemon curd is amazing as frosting, topping and filling for various cakes, muffins, tarts, cookies and other pastries. Best thing to do is make them and store them like a jam for use whenever.

The video below is what I use. It avoids curdling so that you don't have to strain the lemon curd.

Ingredients:
  • 3 oz. (6 Tbs.) unsalted butter, softened at room temperature
  • 1 cup sugar
  • 2 large eggs
  • 2 large egg yolks
  • 2/3 cup fresh lemon juice
  • 1 tsp. grated lemon zest (optional)

Directions:

In a med-large bowl, add sugar and butter. Beat till well blended, kinda crumbly.

Add 2 large eggs 1 at a time while continuing to beat each time. Add 2 egg yolks, also 1 at a time while continuing to beat each time.

Add lemon juice while continuing to mix for another 40-60 secs.

Pour mixture in a medium pot over low heat. Stir until smooth (like a smoothie).

Turn heat to medium. Stir for about 15 minutes until mixture thickens. It should be smooth.

Remove from heat and add lemon zest if desired. Pour into a medium bowl to chill.

Cover bowl with plastic wrap. Push down the wrap to completely touch the top of the lemon curd to prevent skin from forming.

Chill in refrigerator for at least 2 hours before using lemon curd for cookies, pies, cheesecakes and other baked goods.

How to use lemon curd?

Lemon curds are extremely easy to use and quite delicious. You can use them as garnish topping for cakes, cupcakes, cookies, tarts and other pastries. Lemon curds are also tasty as filling for parfaits, choux pastries, donuts and filled-treats. One thing I've always liked is to use lemon curd as a substitute for pancake syrup. It's yummy.
