Chocolate Lava Cake in Ramekins
Ingredients for 4 ramekins (standard size):

- softened butter
- 2 tbsp granulated sugar
- 1/2 cup dark chocolate chips
- 1/4 cup heavy cream
- 3/4 cup dark chocolate chips
- 5 tbsp butter
- 2 eggs
- 2 egg yolks
- 1/3 cup light brown sugar
- 1/2 tsp kosher salt
- 1 tsp vanilla extract
- 2 tbsp all-purpose flour
- powdered sugar
Directions:
1) The video below is the source. I followed it for the most part with some deviation.2) Preheat oven to 425 deg F.
3) Prepare each ramekin by greasing it with softened butter. Sprinkle 1/2 tbsp of granulated sugar inside. Set aside.
4) Prepare the chocolate core of the lava cake by mixing 1/2 cup of dark chocolate chips with 1/4 cup of heavy cream in a microwave safe bowl. This is where I deviated from the video because it requires boiling the heavy cream first. I'm just microwaving the chocolate and heavy cream.
5) Melt the chocolate and cream in the microwave and mix till well-blended. Chill mix in the freezer for 20 minutes or so.
6) In a separate microwave safe bowl, add 3/4 cup dark chocolate chips and 5 tbsp butter. Melt and mix till well-blended. Set aside.
7) In a medium to large bowl, add 2 eggs and 2 egg yolks. Basically, you'll be using 4 eggs, but the egg whites from the last 2 eggs will not be included.
8) Add 1/3 cup light brown sugar, 1/2 tsp kosher salt, 1 tsp vanilla extract and 2 tbsp all-purpose flour. Mix well. Use a hand mixer if you have it.
9) Add melted chocolate & butter. Continue to mix until cake batter is well blended.
10) By now, the chocolate core should have been chilled enough. Assuming, soo let's proceed.
11) Using an ice cream scooper or a large tablespoon, scoop cake batter and place in the ramekin. You should scoop enough to cover the bottom of each ramekin. One scoop from an ice cream scooper is enough. Adjust if using a spoon.
12) Then scoop a smaller amount of the chocolate core and drop it in the middle of the ramekin. Cover with cake batter, leaving some room for cake to rise.
13) Place in oven and bake for 12 minutes. Remove from oven and allow to set for 5-10 minutes.
14) At this time, you can either serve them in ramekins...
or pop them out on a plate. In either case, you can optionally sprinkle with as much or as little powdered sugar.
