Reese's Pieces Cocoa Cookies

Great cookies for the chocolate lovers. They're also fantastic for Halloween, Thanksgiving and Christmas.

The video below is from Joy of Baking and it's for classic chocolate cookies with chocolate chips. For these cookies, we (my cousin and I) substituted Reese's Pieces candies. Amazing turn out!

INGREDIENTS:
  • 1/2 cup unsalted butter, at room temperature
  • 1/3 cup light brown sugar (firmly packed)
  • 1/4 cup granulated white sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg, at room temperature
  • 1 cup all purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups Reeses Pieces

DIRECTIONS: How to make cocoa cookies at home?

1) Preheat oven to 350 deg F. Prepare two baking sheets with parchment paper.

2) In a large bowl, cream butter until smooth. Add brown and white sugar. Then beat until light and fluffy.

3) Add large egg and vanilla extract. Continue to beat until smooth.

4) In a separate large bowl, add flour, baking powder and salt. Sift cocoa powder into the bowl. Mix well.

5) Then add flour mix to the wet mix to make the batter. Blend until well combined and crumbly.

6) Add Reeses Pieces and continue to mix.

7) Scoop out and roll about 1-inch cookie dough and place it on the baking sheet. Continue until dough is used up.

8) Be sure to leave 2-3 inches of space between each dough so that cookie will have plenty of space to expand while baking.

9) Place in oven and bake for 8-10 minutes.

10) Cool to room temperature and before serving.
