Tasty Cookie Dough Brownies

Ingredients for Brownie Layer:
  • 1/2 cup flour
  • 1 tablespoon unsweetened cocoa
  • 1/2 tsp salt
  • 3 1/2 oz semi sweet chocolate chopped (or use chocolate chips).
  • 1/3 cup unsalted butter
  • 2/3 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Ingredients for Cookie Dough Layer:
  • 1/2 cup unsalted butter
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 2 tablespoons milk or cream
  • 1/2 tsp vanilla extract
  • 3/4 cup flour
  • 1/4 tsp salt
  • 1/2 cup mini semi-sweet chocolate chips (optional? not included)

Ingredients for Chocolate Ganache:
  • 3 1/2 oz semi sweet chocolate
  • 2 tbsp butter

Make the Brownie Layer:

Preheat oven to 350 deg F. Prepare a 8x10" baking pan with parchment paper. Use baking spray if desired.

In a medium mixing bowl, combine flour, salt and cocoa. Set aside.

In a separate microwaveable mixing bowl, combine butter and chocolate. Melt in a microwave on high for 1-2 minutes. Stir until smooth and add brown sugar.

Continue to stir until sugar is combined and mixture has cooled. Add vanilla and beat in eggs.

Add flour mixture and fold in until just combined.

Pour the batter into baking pan. Bake 20 minutes or until done using the toothpick test (poke a toothpick in the middle, should come out clean). Set aside and cool brownie completely.

Make the Cookie Dough Layer

In a mixing bowl, cream sugar and butter. Add milk and vanilla and blend well.

Add flour and salt. Stir until combined.

Optionally, stir in chocolate chips. I had a shortage of chocolate chips when I made this brownie, so I skipped this step. Still turned out amazing.

Set aside in refrigerator for a few minutes.

Make the Chocolate Ganache:

In a microwaveable mixing bowl, melt the butter and chocolate in the microwave on high for 1-2 minutes until melted. Stir until smooth.

Put it all together:

Spread cookie dough over the baked and cooled brownies. Then top it off with the melted chocolate glaze. Chill until fully set, remove from the pan and cut into pieces.
