Spice Pumpkin Bundt Cake

These pumpkin cakes are amazing for fall, Thanksgiving and holidays get togethers. You can top it with anything like chocolate, vanilla, caramel and, in this case, nutella sprinkled with walnuts. Delicious!

Ingredients:
  • 2 1/4 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ground allspice
  • 3/4 tsp nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1 1/3 cups canned pumpkin
  • 3/4 cup buttermilk
  • 1 tsp vanilla
  • 2 sticks unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 eggs

Directions:

Preheat oven to 350 deg F. Prepare bundt cake pan by spraying it with Canola oil


In a medium-to-large mixing bowl, add flour, baking powder, baking soda, cinnamon, allspice, nutmeg, ginger, cloves, and salt in a bowl. Mix well and set aside.

In another medium bowl, add pumpkin, buttermilk and vanilla. Mix well set aside.

Using a stand mixer, if you have one, beat butter, granulated sugar and brown sugar until fluffy. Add eggs and beat until incorporated.

Reduce speed to low and add flour and pumpkin mixtures. Alternate between flour and pumpkin mixtures till used up.

Pour batter into bundt pan. Bake for about 45 minutes or until a toothpick inserted in the center comes out clean.

Cool about 10 minutes and remove from pan. Let cool on a wire rack.

Top and garnish as desired (i.e. chocolate, vanilla, cream cheese, or Nutella). Serve and enjoy.
