What are mini cream puffs?
Mini cream puffs are delicious bite-size choux pastry with custard (or similar) fillings. They're great for eating with afternoon tea or coffee.
These delicious creme puffs are easy to make. Be sure to watch the video below. Keep in mind that the recipe assumes you have a basic piping bag & tips kit for home baking. See it here.
Mini Cream Puffs
For the Puffs:
- 1 cup water
- 1/2 cup butter
- 1/2 tsp salt
- 1 tsp sugar
- 1 cup all purpose flour
- 4 eggs
For the Fillings:
- 1 1/2 cup milk
- 1/2 cup sugar
- 1 tbsp vanilla extract
- 1/4 cup cornstarch
- 3 egg yolks
- 1/2 cup milk
- 1 tbsp butter
For garnishing:
- powdered sugar
Directions: How to make Mini Cream Puffs
Make the Puffs--1) Preheat oven to 375 deg F.
2) In a medium to large saucepan, add water, butter, salt and sugar. High heat to boil and mix.
3) Lower heat to low-medium and add flour. Continue to mix until you get a mashed potato-like consistency.
4) Place flour mixture into a medium-sized mixing bowl. Add eggs one at a time while mixing until all eggs are used. Batter should be smoother.
5) Pour batter into a piping bag with medium (or large) tip. On a baking pan lined with parchment paper, squeeze a roundish portion of the batter at 1-inch or so in diameter. Continue until all (or most) of the batter is used.
You may, as an option, brush melted butter on top of each batter.
6) Bake for 25-30 min. Puffs should be golden brown.
7) Remove from oven and set aside when done.
Make the Fillings--
8) While the puffs are baking, add milk, sugar and vanilla extract in a separate medium saucepan over low-medium heat. Stir until well-combined.
9) In a medium mixing bowl, add cornstarch, egg yolks and milk. Mix until well-combined.
10) Add cornstarch mix into the saucepan, continue mixing. Add butter. Continue mixing until mixture thickens.
11) Remove from heat and chill in the fridge for at least 1 hour.
Putting it all together--
12) Put some cream filling in a piping bag with small tip.
13) Take each of your pastries and poke a hole using a sharp kitchen knife. The video below pokes the holes at the bottom. That might make the puffs stick to the plate or serving trays, so I'm poking the sides.
14) Fill each puff with cream filling until all puffs are filled. Dust top of the puffs with confectioners sugar.
15) Serve. Enjoy!
