Ricotta-filled Cannolis

These delicious Italian traditional desserts have been in my mind for a long time and my cousin and I finally got the chance to make them over the past Christmas holidays. They're amazing!

The Youtube recipe we followed is below. However, instead of making our own shells, we're using store-boughts from our local grocery store.

Ingredients for the filling (24 regular-sized cannolis):
  • 4 cups ricotta cheese, strained
  • 1/2 tsp ground cinnamon
  • 1 cup icing sugar
  • 1 tsp vanilla extract

Garnishing (optional)
  • Chocolate Chips
  • Icing Sugar
  • Pistachio (or other nuts)

Directions on how to make cannoli cream:

1) Strain liquid from ricotta cheese for a few hours. Some online recipes call for overnight. So the time for draining depends on how much time you have. The idea is to remove as much water as possible so that your filling is not watery.

2) In a large steel mixing bowl, add the strained ricotta cheese, cinnamon, icing sugar and vanilla extract. Mix until smooth and creamy. We used an electric mixer. But you can mix manually as well.

3) Stuff each shell with the filling. Many online recipes uses either a homemade or store-bought filling mold (like this). But my cousin and I just spooned them into the shells. Just be sure to stuff them on both sides.

4) One last step before serving is adding the garnishing. So far, we've used chocolate chips and pistachio nuts on separate occassions. Chocolate chips can be used as is. But we prefer to grind the pistachios.

Now, here's the source video. It has instructions to make shells, but again, we like to just buy them mainly because we don't have the special rolls to make cannoli shells.
