Cheesy Mashed Potato Puffs

This is something I tried from last year's leftover mash potatoes. Cheesy potato puffs make fun snacks, side dish or appetizers. Very simple to make, too.

Ingredients:
  • 1 batch mashed potatoes
  • 1 bag shredded cheese

Directions

1) Pre-heat oven to 350 deg F. Scoop 1 tablespoon of mashed potatoes into a baking muffin cup. These mashed potatoes could be newly made from scratch or from packaged mix or leftovers from say, a big Thanksgiving dinner party.

2) Repeat until all mashed potatoes are gone or all the cups are used.

3) Add shredded cheese on top of each cup. Bake in oven for 20-25 minutes.

4) Remove from oven and allow to cool for 10 minutes before serving.

Below is the video used for inspiration. The author did not use baking cups, but instead piped a glob of mashed potato on a baking sheet. Either way works.
