Upside Down Apple Cake with Sour Cream

This upside down apple cake recipe is amazing for Thanksgiving, Christmas, New Years, Easter, 4th of July and other family & friends gathering. It's a good idea for church mixers, too.

Does sour cream make cake better?

The source video is below, but I'm substituting sour cream for yogurt. Baking with sour cream makes your baked goods, pastries & cake denser and richer than if you use milk. It's a straight 1 cup to 1 cup substitute.

The video is also using a 10x3 inch non-stick skillet to bake the cake. I'm using a non-stick angel food cake pan.

How to make Upside Down Apple Bundt Cake with Sour Cream?

Ingredients:
  • 5 Granny Smith apples
  • 4 tbsp unsalted butter 
  • 1/2 cup packed light brown sugar 
  • 3 tbsp lemon juice 
  • 1 cup all-purpose flour 
  • 1 tsp baking powder 
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs (room temperature)
  • 1/2 cup granulated sugar 
  • 1/2 cup packed light brown sugar 
  • 1/2 cup sour cream
  • 6 tbsp melted unsalted butter 
  • 1 tsp vanilla extract
Direction:

1. Pre-heat oven to 350 deg F. Peel apples and cut each one to about 6 slices. Set aside.

2. In skillet, melt 4 tbsp butter over medium heat. Then add apple and cook for 3 minutes or so.

3. Add 1/2 cup of light brown sugar. Add 3 tbsp lemon juice. Stir for 1 minute or so. Sugar should melt into caramel.

4. Pour apple and caramel into an angel food cake pan. Arrange apple slices in a way you want it to look on top of the cake. Set aside.

5. In a medium mixing bowl, add flour, baking powder, baking soda and salt. Stir until well-mixed. Set aside.

6. In a large mixing bowl, add eggs, granulated sugar and brown sugar. Whisk until well-blended.

7. Add sour cream and melted butter. Continue to mix.

8. Add vanilla extract. Mix. Add flour mix from medium bowl. Stir until cake batter is smooth.

9. Pour batter into angel food pan on top of the apples. Smooth out the top with a spatula.

10. Bake for 35 minutes. Remove from oven and allow to cool for at least 20 minutes.

11. Place a serving plate upside down on top of the cake pan. Flip the cake. You may have to shake it loose a little. Run a knife on the edge before flipping if necessary.

12. Serve and enjoy.

shouldn't the baking time be longer if you are making this in a bundt pan which is much thicker than a sheet pan?
