Sour Cream Coffee Cake Muffins

Ingredients for the Muffins:
  • 1/2 cup salted butter, room temperature
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup sour cream
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs

Ingredients for the Streusel Topping:
  • 1 cup packed brown sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup cold salted butter, cut into small pieces

Directions:

Make the streusel topping:

In a medium mixing bowl, add brown sugar, flour, and salt. Stir with a pastry blender to cut the butter into the flour mixture until it resembles small pebbles or sand. Set aside.

If you don't have a pastry blender, use two knives in a criss cross pattern to mix.


Make the muffin:

Preheat oven to 350 degrees F. Line muffin pan with paper cups.

In a large mixing bowl, add butter, sour cream, granulated sugar, vanilla, and eggs. Mix with an electric hand mixer until light and creamy.

Add flour, baking powder, and baking soda. Continue to mix until combined.

Spoon batter into prepared muffin pan. This recipe makes enough for 24 muffins.

Add a spoonful of streusel on top of each muffin. Bake for 25 minutes or until toothpick inserted into the center comes out clean.

Remove muffins from baking pan and transfer to a wire rack to cool completely.

Serve.
