Always a great dessert to treat myself is a slice of banana cake and a cup of green tea. Makes for a quiet afternoon.
This is what I use for ingredient:
Banana Cake
Directions:- ½ pound butter
- 4 eggs
- 1-1/2 cups sugar
- 1 cup sour cream
- ½ cup mashed ripe bananas
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 3 cups flour
Preheat oven to 350 deg F.
In a medium-to-large-stainless steel mixing bowl, cream butter and sugar together.
Add ripe bananas and mix until smooth.
Add eggs one at a time while continuing to mix.
Then add sour cream, baking soda, baking powder, vanilla, and flour.
Mix on low speed for 1 minute and then on one speed higher for about 2 minutes or until smooth.
Place cake mix in a well greased and floured 10 inch x 3 inch tube pan.
Bake in oven for 25-35 minutes
Test cake by inserting a toothpick in the center. If the toothpick comes out clean then the cake is done.
Serve in slices with your favorite beverage. Mine is tea and, sometimes, coffee.
The directions as written uses a stand mixer. Of course, you can also cream and mix manually.
