My brother, this past Christmas, cobbled up a tasty sweet peanut butter fudge. He found the recipe from Youtube. To me, this was more of a food hack of sorts. It worked out well.

The thing is, I've come to like peanut butter. Whether I'm spooning over crackers or dipping apple wedges, I'm eating more peanut butter for weight loss snacks than before. It's not bad.

Ingredients:
  • 1 Creamy Peanut Butter (16 oz)
  • 1 Sugar Free Creamy Vanilla Frosting (15 oz)

Direction: How to make microwave peanut butter fudge?

1) Remove peanut butter and frosting from their respective container and into a large microwavable bowl. The video below shows a direct microwaving from the original containers. That's probably not the safest way to go.

2) Microwave till just soft / slightly melted. Should be about a minute or so depending on your microwave oven.

3) Mix peanut butter and frosting thoroughly. Pour content onto a 9x12 baking pan lined with parchment paper and even up the top with a spatula, if necessary.

4) Refrigerate for 2 hours or, better yet, overnight. Lift using the parchment paper for easy slicing.

Serve and enjoy!

You can be creative when using this food hack such as, for example, using crunchy peanut butter and chocolate frosting. I asked my brother to use sugar free frosting for weight loss reasons, but we all know that is not really the healthiest dessert. It's just a tasty treat.
