Vanilla Cheesecake

Make this creamy cheesecake for any party and holiday events. My cousin and I made this for a Christmas party that she hosted. The guests loved it.

Ingredients:
  • 3/4 cups Nilla Wafers (crushed)
  • 3/4 stick unsalted butter
  • 1 cup cream cheese, softened
  • 1/2 cup condensed milk
  • 3/4 cup sour cream
  • Dash of vanilla paste
  • 1/2 tbsp plain flour
  • 1 egg
  • 1 egg yolk

Directions: How to make vanilla cheesecake?

1. Melt butter and pour into a medium mixing bowl. Add crushed wafers and mix well to make base crumbs for the cheesecake. Consistency should be that of wet sand.

2. Transfer crumbs into a 7-inch springform baking pan. 9-inch should work too, but cheesecake will be thinner, of course.

3. Press the crumbs throughout the bottom and up to the side. Wrap the bottom of the springform pan with aluminum foil. Set aside in refrigerator till needed.

4. In a medium pot, boil water. Preheat oven to 300 deg F.

5. In the bowl of a stand mixer with paddle attachment set to medium-low speed, add softened cream cheese. Then add condensed milk.

6. Continue mixing. Then add 1 egg then 1 egg yolk. Then add sour cream.

7. Add flour while mixing. Then finally, vanilla paste. Continue mix until well combined.

8. Pour mixture onto springform pan. If there are air bubbles, use a whisk to break it down.

9. Be careful with the next step because you'll be assembling a water bath in the oven. Place the springform pan on a medium to large baking tray that can hold water.

10. Put the baking tray in the oven. Pour hot water into the baking tray so that springform pan is surrounded by water.

11. Bake for 55 minutes to 1 hour. Turn off oven. Leave the cheesecake inside, but open the oven 1-inch and let cool for 1 hour. This step for avoiding cracks on the surface.

12. When the hour is up, remove cheesecake from oven. Then chill in refrigerator for a few hours to overnight.

13. Remove from springform pan, garnish (if desired) and enjoy.
