Delicious Lemon Bars

INGREDIENTS:

FOR THE CRUST:
  • 2 sticks (1 cup) of softened, unsalted butter
  • 1/3 cup of sugar
  • 2 cups of all purpose flour
  • the zest from 2 lemons
  • 1/4 tsp of salt

FOR THE LEMON FILLING:

  • 6 LARGE eggs
  • 2 cups MINUS 2 Tablespoons of caster sugar
  • 3/4 cup of sifted all purpose flour
  • 1/4 tsp of salt
  • 3/4 cup of fresh lemon juice
OPTIONAL:
  • powdered sugar

DIRECTIONS: How to make Lemon Bars

Make the crust

1. Preheat oven to 350 deg F.

2. In a mixing bowl, beat unsalted butter till it's mashed up. Should take about 30 seconds using a hand mixer.

3. Add sugar and beat for another 30 seconds till well mixed. Next, grate the zest from 2 lemons.

4. Add salt and flour. Mix with hand mixer until crumbly.

5. In a 13 x 9 baking dish lined with aluminum foil, spread out the crust mix and carefully pat down the mix evenly with your hand.

6. Bake in oven for 30 minutes or when the edges are slightly brown.

Make the lemon filling

7. To make the filling, it is best to wait until there's 5-10 minutes more before the crust done.

8. In another mixing bowl, add eggs, caster sugar, flour and salt. Whisk until well blended.

9. Then add lemon juice and continue to whisk until smooth.

Put it together

10. Remove the crust from the oven and pour the filling on top of the hot crust. Lower the oven to 325 deg F.

11. Bake for 20 minutes. Then remove from the oven and let cool and set in room temperature.

12. Then chill in the refrigerator for a few hours to overnight. Foil should peel off easily.

13. Cut into square pieces. Optionally, you can garnish with powdered sugar before serving.
