Mini Lemon Curd Tarts Recipe

Having a lemon tree in our backyard makes it very convenient to bake lemon pastries such as lemon loaf cakes. This recipe is for mini lemon curd tarts. We make it for spring / summer get togethers such as birthday parties, church cookouts, etc.

The shells, on the other hand, we usually just buy, such as these. It can save a lot of time.

Mini Lemon Curd Tarts Recipe

  • 3 oz. (6 Tbs.) unsalted butter, softened at room temperature
  • 1 cup sugar
  • 2 large eggs
  • 2 large egg yolks
  • 2/3 cup fresh lemon juice
  • 1 tsp. grated lemon zest (optional)

Once, the curd is finished, all you have to do is spoon them onto the mini tart shells. Garnish as necessary.

You can sprinkle powdered sugar or top each mini lemon curd tart with chopped strawberries, blue berries or other fruits of your choice.
