Can Olive Oil Be Used For Cakes?
I got this copycat Starbucks lemon loaf cake recipe from a gif online (below). It's so amazing. I'm using olive oil instead of vegetable oil to add density to the cake. So if you don't like olive oil, stick to the original recipe using vegetable oil.

How to bake Starbucks Lemon Loaf Cake with Olive Oil?
Ingredients:For the Cake:
- 1 cup Sugar
- 3 Eggs
- 1/2 cup Olive Oil
- 1 cup Greek Yogurt
- 1/3 cup Lemon Juice
- 2 tablespoons Lemon Zest
- 1 1/2 cup Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
For the Glaze (optional):
- 2 cups Powdered Sugar
- 5 tbsp Lemon Juice
Bake the cake:
1) Preheat oven to 350 deg F. Grease baking loaf pan with butter or non-stick spray.
2) In a large mixing stainless steel bowl, add sugar, eggs, olive oil, yogurt, lemon juice and lemon zest. Mix well. Set aside.
3) In a separate medium mixing bowl, add flour, baking powder and salt. Mix well.
4) Add the flour-salt mix to egg-lemon juice mix. Stir until just blended. Batter should be clumpy. So don't over mix.
5) Pour into loaf pan. Bake for 50 minutes.
Make the glaze:
6) To me, the glaze is optional because by itself, this lemon loaf cake is already amazing. Plus I love the taste of olive oil cake.
7) To make the glaze, just pour in a mixing bowl, powdered sugar and lemon juice. Mix until smooth.
Put it together:
8) Remove cake from oven when done. Drizzle the glaze over cake. Allow to set for a few minutes.
9) Enjoy.
