Can You Substitute Quinoa For Rice?

Here's another recipe where quinoa was also substituted for rice. The ratio is basically 1:1, meaning that I'm using 1 cup of quinoa instead of 1 cup of rice. Additionally, this is prepared without cooking quinoa first and using a slow cooker.

Quinoa Instead of Rice in Slow Cooker

Ingredients:
  • 1 cup Quinoa
  • 2 tablespoon Olive Oil
  • Onion Powder
  • 2 large Tomatoes
  • 2 cups Vegetable Broth
  • Salt & Pepper
  • 2 cups Frozen Baby Spinach

Directions: How to make quinoa in slow cooker?

1. Rinse quinoa and drain.

2. In a skillet, warm olive oil over medium-high setting. Stir in tomatoes and broth.

3. Add onion powder to taste. Increase heat to high and bring to a boil.

4. Transfer to slow cooker. Add quinoa and season with salt and pepper.

5. Cover and cook on low until most of the liquid is absorbed and quinoa is tender. It should take about 2 hours.

Remove cover and stir in spinach. If pilaf looks dry, add up to 1/2 cup more broth).

6. Cover and cook 15 minutes longer or until spinach has wilted. Serve.

Just a sidenote, quinoa is really healthy for you because it's loaded with, among others, fiber and antioxidants. It's a good idea to incorporate it into your regular diet. Here is another recipe using quinoa as rice substitute.
