Making roasted pumpkin seeds is easy. It's a fun tradition when it comes to Halloween. We get the seeds from pumpkins we carve to make Jack O'Lanterns. We buy 'em, too, if we want more seeds to snack on. Trader Joes and local farmers' markets are my favorite places to shop.
Direction:
Boil the seeds in water with salt and garlic salt to taste for about 10-15 minutes. Preheat oven to 350 deg F. Remove seeds and drain.
In a bowl, mix salt, garlic salt, oregano, black pepper and a touch of sugar. I didn't measure, just eyeballed the amount, i.e. done to taste. Toss the seeds in the salt mix for an even coating.
Arrange seeds in a cookie sheet lined with foil. Bake for 25 minutes or until dried. Be sure to stir every few minutes to prevent burning.
These roasted seeds make a fun and healthy snack to kickoff the fall-winter holidays.
