Simple Blueberry and Raspberry Muffin Recipe

Healthy Blueberry / Raspberry Homemade Muffins for Breakfast, Snacks, Dessert from Oat Bran, Wheat Germ, and more.

Great for breakfast and snacks. Maybe even a healthy dessert. This muffin recipe includes oat bran for fiber and protein, berries for anti-oxidant and Vitamin C, and wheat germ for more vitamins and other nutrients.

Oat Bran Muffins

Ingredients for 10
  • 1 1/2 cup Whole Wheat Flour
  • 1/2 cup Brown Sugar
  • 1/4 cup Oat Bran
  • 1/4 cup Quick Cooking Oats
  • 1/4 cup Wheat Germ
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 cup Blueberries
  • 1/2 cup Raspberries
  • 1 Banana (mashed)
  • 1 cup Yogurt (0% fat)
  • 1 Egg
  • 1 tbsp Apple Sauce
  • 1 tsp Vanilla Extract

Preheat oven at 350 deg F.

In a large bowl, mix flour, sugar, oat bran, cooking oats, wheat germ, baking powder, baking soda, salt, blueberries, and raspberries. In a separate bowl, mix mashed bananas, yogurt, egg, apple sauce, and vanilla extract. Mix the contents of the two bowls thoroughly (dry stuff + wet stuff). Pour into a muffin tray and bake for 18-20 minutes.

Let cool and serve.

Perhaps there's a way to mix in a batch of quinoa in this muffin for an extra dose of healthy protein.
