How To Make Mini Cheesecakes With Vanilla Wafers

Made these scrumptious bite-size cheesecakes for a graduation party. It was a hit.

The video below has the recipe. And it's for making 48 mini cheesecakes using mini muffin pans, such as these. Of course, you'll be needing mini muffin paper cups, too.

INGREDIENTS
  • 1 (12 ounce) package vanilla wafers
  • 2 (8 ounce) packages cream cheese
  • 3/4 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 can cherry pie filling (or any topping desired)

DIRECTION: How to make mini cheesecake without graham crackers

Step 1. Preheat oven to 350 deg F.

Step 2. Line mini muffin pans with paper cups.

Step 3. In a large Ziploc plastic bag, crush vanilla wafers as fine as possible

Step 4. Then place 1/2 teaspoon of the crushed vanilla wafers into each paper cup.

Step 5. In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy.

Step 6. Fill each mini muffin cup almost to the top with cream cheese mixture.

Step 7. Bake for 15 minutes.

Step 8. Remove from oven and allow to cool for 20 minutes or so. I sometimes let them cool overnight before serving. Be sure to cover them nice and proper if you do so.

Step 9. Top with a teaspoonful of cherry pie filling or any other topping you desire.

Step 10. Serve.
