How To Make Broccoli Cheese Soup in Crockpot

This recipe shouldn't take long to prep. It could be done within 20 minutes in the morning and be ready for an early dinner when you get home.

Slow Cooker Broccoli Cheese Soup

Ingredients for 6 servings:
  • 1/3 cup butter, sliced
  • 1 1/2 cups onion, chopped
  • 2 cloves garlic, minced
  • 6 tbsp all-purpose flour
  • Salt & Pepper (to taste)
  • 2 (12 oz.) cans evaporated milk
  • 5 cups low-sodium chicken broth
  • 5 cups fresh broccoli, chopped
  • 1/8 tsp dried thyme
  • 1/2 cup heavy cream
  • 12 oz. sharp cheddar cheese, shredded
  • 2 oz. parmesan cheese, shredded

Directions:

Step 1) In a large skillet, melt butter over medium heat. Add onions and saute until they begin to soften.

Step 2) Add garlic, flour and season with salt and pepper. Continue to cook while stirring for another 2 minutes. While whisking, slowly pour in evaporated milk.

Step 3) Cook mixture, stirring constantly until it begins to thicken then pour into slow cooker along with chicken broth, chopped broccoli, and thyme. Cover with lid and cook on low heat for 6 hours.

Step 4) Turn heat to warm (or off) and stir in heavy cream, then add in shredded cheddar and parmesan cheeses and stir to blend. Step 5) Serve warm.
