Cheddar Buttermilk Biscuits with Bacon and Chives


Homemade Buttermilk Biscuits From Scratch

Ingredients
  • 4 cups all purpose flour
  • 1/2 tsp baking soda
  • 2 tbsp baking powder
  • 2 tsp salt
  • 12 tbsp butter, chilled
  • 2 cups buttermilk
  • 12 oz shredded cheddar
  • 1/2 cup dried chives
  • 12 oz bacon, crisped and chopped
Direction

Preheat oven to 450 deg F.

Mix all ingredients in a large bowl until you get a workable dough. See the video below for tips on how to mix a buttermilk biscuit dough by hand properly.

When dough is ready, cut out 1 inch thick biscuits and arrange them on a greased baking sheet with sides touching (see video).

Bake for 11-15 minutes or until top of biscuits just turn golden.

Using your hands, press out to 1/2" and fold it over itself. Do this 3-4 more times, then press it to 1" or thicker depending on how you like your biscuits.

Cut to whatever shape you want, bake in a 450 degree oven 11-15 mins depending on thickness.

Serve with gravy, jam or butter. But the added cheddar, chives and bacon will provide a flavorful biscuit on its own.

How to mix biscuit dough by hand


Use this video as a guideline on how to properly mix and cut out a buttermlik biscuit dough. Of course, they use different recipe for the biscuits which is closer to another biscuit recipe that I've used in the past. They're also careful in chilling their equipment. I did not do it, but it's probably a good idea for next time.
