Cheesy Low Carb Casserole with Bacon and Eggs

Low Carb Casserole

  • 1 lb bacon, cooked and chopped
  • 1 cup chopped onion
  • 1 cup chopped spinach
  • 1 cup chopped broccoli
  • 1 lb shredded cheese (any mix for your taste)
  • 1 dozen eggs

Preheat oven to 325 deg F.

If you haven't done so already, cook bacon and chop it up. Remove bacon from frying pan and set aside.

Sautee onion, spinach and broccoli. It's ok to use bacon fat. Add salt & pepper to taste if needed.

Drain oil when finish.

Place in a bowl and mix thoroughly with bacon. Then set aside.

Using a cold stick of butter, grease up baking dish.

In a large bowl, beat eggs.

Layer the casserole beginning with 1/3 eggs, then spread out 1/3 vegetable mix, then spread out 1/3 cheese.

Repeat until all ingredients are used up.

Add more cheese to cover top if necessary.

Bake for 40 minutes.

Serve and enjoy.

Leftovers make fantastic breakfast.
