Having to buy a slow cooker means I get to abuse it while it's still new. Here is a recipe for slow cooked tortellini and spinach that's rather simple. I suppose that you can replace the tortellini with other types of stuffed pasta and go from there.
Crockpot Tortellini Spinach Soup

- 1 package of frozen tortellini
- 1 small bag of fresh spinach
- 2 cans (10.5 oz) of diced tomatoes
- 4 cups of chicken broth
- 1 block of Kraft Philadelphia Cream Cheese
Cube the cream cheese into 1-inch blocks or so. Mix all ingredients in a slow cooker. Set temperature to low for 5-6 hrs. Stir to blend thoroughly in the last hour.
Sometimes, I add onion, garlic, and/or sliced mushrooms to change things around. They're great healthy snack ideas for weight loss. But by itself, this recipe is already yummy.
