How to make olive oil cookies?

I hope you like chewy chocolate cookies with powdered sugar. This chocolate crinkle cookie recipe is from a YouTube video (below). But I'm using olive oil as a substitute for vegetable oil.

When making cookies with olive oil, just use the same amount as you would with butter or vegetable oil. Essentially, it's 1-to-1 ratio.

I've come to like the taste of olive oil for baking. The baked goodies seem to taste lighter. It's the only way I can describe it.

Fudgy & Chewy Chocolate Crinkle Cookies with Powdered Sugar from Olive Oil

Ingredients:
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/4 cup olive oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup powdered sugar

Directions: How to make crinkle cookies with olive oil

Step 1. In a medium stainless steel mixing bowl, add cocoa powder, brown sugar, white sugar and vegetable oil. Mix until well-combined.

Step 2. Then add two eggs. Continue to mix. Use an electric handmixer if necessary.

Step 3. Add vanilla extract. Continue to mix.

Step 4. Sift flour, baking powder and salt into the mixing bowl. Mix the ingredients until just combined.

Step 5. Cover bowl with plastic wrap or aluminum foil. Freeze for 1 hour.

Step 6. Preheat oven 350 deg F. In a small bowl, pour powdered sugar.

Step 7. Using a tablespoon, scoop a ball of cookie dough and dip into the powdered sugar. Be sure to cover the ball completely.

Step 8. In a baking sheet line with parchment paper, arrange the balls of cookie dough, leaving 1-inch on each sides for when cookies expands.

Step 9. Bake for 10-12 minutes. Let cool to room temperature before serving.
