Chicken Egg Fried Rice

I love fried rice. It's so easy to make at home. But you have to make sure to use DAY OLD COLD white rice.

This particular recipe uses cooked chicken, but I have another recipe for beef fried rice. By "cooked chicken", I mean that you cook the chicken any way you want ahead of time. So boiled, steamed, roasted or baked as you prefer. For this serving, I use day old roasted chicken from a local supermarket.

Easy Chicken & Eggs Fried Rice

Ingredients:
  • 2 tbsp low sodium soy sauce
  • 1/2 tsp sugar
  • 1 tbsp vegetable oil
  • 2 eggs, well beaten
  • 1 1/2 cup chicken, cooked & cubed/sliced/shredded
  • 1/2 cup frozen peas and carrots
  • 1 tsp. fresh ginger, minced
  • 1 clove garlic, minced
  • 2 cups cooked whited rice, day old
Direction:

Heat vegetable oil in a wok or medium skillet. Add eggs, scramble and set aside.

Add a little more oil in the wok and stir fry peas, carrots, ginger & garlic. About 3-4 minutes.

Add rice, chicken, eggs, soy sauce, sugar, vegetable oil. Stir fry for 5-10 minutes.

Adjust low sodium soy sauce to taste. Add any other seasoning as necessary. Sometimes I add garlic salt.

Serve while hot.
