Loaded Baked Mashed Cauliflower Casserole

This is something my cousin tried a few weeks back. It's a part of a keto diet that she's trying in order to lose weight after having her baby. I've eaten some of it myself and even made it at home. It's delicious and makes a good alternative to mashed potato casseroles.

How to mash cauliflower without a food processor?

When making mashed cauliflower, you don't need to use a food processor. You can simply boil the cauliflower and use a fork to mash it down until you get your desired texture. Be sure to drain water afterwards.

Loaded Mashed Cauliflower Casserole

Ingredients:
  • 2 bags of 16 oz frozen cauliflower
  • 8 oz cream cheese, softened
  • 8 oz shredded cheese
  • 4 green onions, chopped
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 pieces bacon, cooked and crumbled
  • 1 chicken breast, cooked and cubed

Direction: How to make cauliflower casserole in the oven


Step 1) Preheat oven to 350 deg F.

Step 2) Fill a medium-to-large pot with water to about 1/2-1/3 full. Bring the water to boil and add salt.

Step 3) Add frozen cauliflower and boil for about 10 minutes. It's done when the cauliflower is easily mashable with a fork.

Step 4) Drain water and mash down the cauliflowers. Use a potato masher or something similar if you have it. A fork can do the job as well.

Step 5) Add softened cream cheese and stir until well mixed. Then add your bacon, chicken, green onions and seasonings. 

Step 6) Add cheese last, then continue mix until well-blended.

Step 7) Pour mixture into a baking dish. Be sure to scrap down as much of the cauliflower mixture as possible.

Step 9) Sprinkle the top with more cheese, pepper, etc, as desired.

Step 10) Bake for 25-35 mins. Remove and allow to cool for 5-10 minutes before serving.
