Delish Baked Zucchini Fries Recipe

Zucchini fries are tasty snacks and appetizers for football games and/or parties. Not to mention that they are healthy for you containing a nice dose of dietary fibers, potassium to help lower blood pressure, magnesium to help reduce the risk of heart attack and stroke, and much much more. And since my parents grow them in their backyard, I get a surprise of zucchinis from time to time. The last time they brought me zucchinis, I made baked fries.

Baked Zucchini Fries

Ingredients:
  • 4 medium Zucchinis (sliced into fry shape)
  • 1 cup Cornmeal
  • 1/2 cup Grated Parmessan
  • 1/4 Salt
  • 1/4 Pepper
  • 1/4 Garlic Salt
  • 2 large Eggs

Directions:

Preheat oven to 400 deg F.

Combine cornmeal, Parmessan cheese, salt, pepper, and garlic salt in a large bowl and mix thoroughly. In a separate bowl, whisk the eggs.

One at a time, take a piece of zucchini fry, dip it into the egg bowl, coat it with the cornmeal mix and lay it on a cookie sheet. Once all fries have been coated and arranged on the sheet, bake them in the oven for 15 minutes. Flip and cook for another 15 minutes or until golden brown.

Serve with your favorite dip. Best eaten while still hot.
