Baked Mac and CheeseDirections:
- 1/2 lb elbow macaroni (cooked al dente)
- 5 tbsps melted butter
- 1/2 cup flour
- 1 cup hot whole milk
- 1/2 tbsp salt
- 1 tsp pepper
- 1 tsp ground nutmeg
- 1/2 cup panko breadcrumbs
- 12 oz shredded gruyere
- 8 oz shredded cheddar
- 6 oz chunky goat cheese
Preheat oven to 375 deg F. Also start boiling your macaroni so that it's cooked al dente by the time you're finished with the cheese sauce. See here if you don't know what that means.
In a saucepan, whisk melted butter and flour over medium heat for a few minutes until well blended. Gradually stir in milk. Be sure that milk is already hot. Use microwave or another saucepan to do so. Continue to whisk until smooth and gooey. Add salt, pepper, and nutmeg and continue to whisk until well blended then turn off heat. Be sure to adjust amount of salt, pepper and nutmeg to taste.
Add shredded gruyere and cheddar. Stir until evenly spread out.
In a baking pan, spread al dente macaroni. Pour cheese sauce and chunky goat cheese. Mix in thoroughly with macaroni. Sprinkle panko breadcrumbs on top.
Bake for 30 minutes until the top is golden brown. Serve and enjoy.
