Can you use extra virgin olive oil in muffins?

If you want to bake a rich, moist muffin for breakfast, snacks or desserts, extra virgin olive oil is your must-have ingredient. Olive oil lends its moisture properties to muffins and other pastries to give them their savory, succulent touch.

Extra virgin olive oil traps the gases released from the essential interaction of baking powder and soda. This slows down gluten formation to keep your muffin soft, moist, and fluffier.
