A very simple, yet tasty combination for a delicious meal -- pan-fried chicken breast with carmelized onion.
Chicken breast is brined in foil for at least one hour using the following
- 2 cups of water
- 1 tbsp of salt
- 1 tbsp sugar
Preheat oven at 400 deg F. Open foil and add a little oil to the chicken and brine. Add spices and seasoning as desired. Close foil. Shake/mix it up. Bake in oven for 20 minutes. And fyi, check out Thomas Keller fried chicken brine. It's amazing.
Carmelize onions any way you know how. Here's a 3-minute video tutorial on how to do so. Just adjust the amount to your needs.
In a separate frying pan, heat up 1-2 tsps of carmelized onion juice in medium-to-high setting. Place chicken breast in pan and fry each side for about 2 minutes per side. Allow for more if desired.
