Ingredients for 2 servings:
- 3.5 oz penne pasta
- 17 oz cherry tomatoes
- 1 red chilli pepper
- 3 cloves of garlic
- 2 tsps olive oil
- 2 tsps balsamic vinegar
Slice tomatoes into wedges (4 per tomato is ok). Chop and dice chili pepper. Crush garlic.
In a sauce pan, heat olive oil over medium-high setting. Once it gets hot, throw in chilli pepper and garlic. Cook until the garlic starts turning soft and golden. Then add tomatoes and vinegar. Lower heat to low-medium so it doesn't burn. Add salt and pepper. Let simmer until mix resembles tomato sauce while occasionally stirring.
Cook penne pasta according to instructions on package. Once pasta is done and drained, add to the arrabbiata sauce and stir until mixed. Serve and enjoy.
