Want more avocado in your diet? Mix it up with eggs and spinach to make an amazingly delicious breakfast. Not to mention that all 3 food -- avocado, spinach and eggs -- are highly recommended for skin care.
Thanks to Laura Vitale's YouTube channel, I found a way to use up a leftover avocado and a small batch of spinach that I did not want to spoil.
So I present to you, an open-faced toast with poached eggs and spinach on mashed avocado.
Ingredients for 2 servings:
Poach the eggs. Do this any way you know how. The video below has a great tip on poaching eggs. I tend to use an egg poacher.
Sautee spinach in butter. This step is something I added from the video below. The spinach are leftovers which I wanted to use up. I'm sure that there are other ingredients in your fridge that you can throw in such as tomatoes that will add to or not ruin the flavor.
Mash avocado in a bowl with squeezed lemon juice and spread on toasted bread. Arrange spinach and poached eggs on top. Sprinkle paprika to taste.
Serve and enjoy.
