Something simple. Something cheap. And yet, delicious and filling. Quesadillas are the way to go. Make it low carb by using the right brand, such as La Tortilla Factory.
INGREDIENTS for 1 serving
DIRECTIONS
Butter one side of a tortilla. Put whatever remaining butter in frying pan over medium heat. Put tortilla in pan with butter side down and add all of ingredients on top. Leave it open faced until the cheese begin to melt. Fold tortilla in half like an omelet. Cook on that side for 1-2 minutes. Then flip to cook the other side for another 1-2 minutes. Tortilla should be crisp and butter with soft cheesy inside.
"HEALTHIER" QUESADILLA OPTION
For something healthier and little more filling, add veggies and something with protein. Using low carb tortillas, this variation will be good for the keto or lo-carb dieters.
The following ingredients was something I experimented with using leftovers and it turned out sooo good!
Amount of the ingredients were eyeballed, so I don't have exact measures. But the directions are the same, using an oven frying pan. I've seen others cook quesadillas using a microwave oven. It's faster to make and less messier, but I like the crispiness of fried tortilla.

- 1 cup of shredded mozzarella cheese
- 0.5 tbsp butter for frying
- 2 tbsp bacon bits (optional)
- 1 oz pickled jalapenos (optional)
