Just like quinoas, chickpeas, also known as garbanzo beans, are low fat, yet, loaded with protein. These legumes should be considered if you're eating healthy. They also go well with soup and salads.
Oven Roasted Chickpeas
- 1 can Chickpeas (drained, rinse, skinless)
- 1/2 cup Olive Oil
Once the chickpeas have been prepped properly, e.g. drained, rinsed, and skin completely removed, pour them in a bowl then mix with olive oil. Mix thoroughly until all chickpeas are well covered with oil. Add more oil if necessary.
Lay out chickpeas on a cooking sheet. Season to taste. We use garlic, salt, black pepper, and paprika.
Cook in oven for 15 minutes, flip the best you can, then cook for another 15 minutes.
Let cool a little before snacking.
