Egg Noodle Chicken Casserole Recipe

As I mentioned in previous posts, I love cooking and eating chicken. Here's a chicken casserole recipe that's good to try:

Egg Noodle and Chicken Casserole

  • 2 1/2 teaspoon Italian Seasoning mix
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dry mustard powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon dried parsley
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper
  • 1 1/2 teaspoon sea salt
  • 3 chicken breasts
  • 4-5 cups egg noodles
  • 3 tablespoon butter
  • 3 tablespoon flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can of green beans
  • 1 cup of lightly steamed broccoli
  • 1/4 cup crushed potato chips
  • 1/4 cup French's Fried Onions


Preheat oven to 350 deg F.

Mix seasoning, powder, dried spices, and sea salt in a bowl.

Boil noodles to al dente and drain. Set aside.

While noodles are boiling, cut up chicken down to bite-sized chunks. Coat each piece of chicken with olive oil and cook in a frying pan. Sprinkle seasoning mix over chicken and cook evenly in medium heat for 10-15 minutes. Set aside when done.

In a saucepan over medium heat, melt butter and slowly whisk flour. Add milk and cook until sauce thickens. Add shredded cheddar cheese and set heat to low and cook for 2-3 minutes more.

Pour half of the sauce, noodles, and chicken in a baking dish. Add and spreadout green beans and broccoli. Cover with Mozarella cheese. Pour the rest of the sauce by spreading it out as much as possible. Sprinkle crushed potato chips and french fried onions evenly over the top. Add extra cheese if you have any. Bake for 30 minutes.

Let cool for 30 minutes before serving.
