Crispy Pan-Fried Chicken

  • 2 Chicken Breasts
  • Seasoning


Preheat oven to 400 deg F.

Heat a cast iron skillet over medium heat. Add a little oil. Season the skin side of chicken breast. When the pan is nice and hot (the oil will be shimmering) put the chicken in, skin side down. Season the other side of the chicken. Let it cook for 6-8 minutes. Flip the chicken when the skin is crispy and cook for a few minutes then remove from pan.

Place chicken in a baking dish and spoon some oil over the chicken. Bake in oven for 15 minutes. Let it cool a little before serving. On top of a bed of quinoa with sun dried tomatoes and roasted peppers just like the picture will do just fine for me.
