Dough:
  • 1 1/4 cup Flour
  • 1/2 tablespoon Sugar
  • 1/2 teaspoon Salt
  • 1/2 cup Warm Water
  • 1 tablespoon Butter
  • 1/2 tablespoon Yeast

Water mix:
  • 4 cups Water
  • 4 tablespoon Baking Soda

Topping:
  • Kosher Salt
  • 1 Egg Yolk (whisked)

Direction:

In a bowl, make a dough by mixing sugar, salt, water, butter, and yeast with 1/4 cup of flour. Keep mixing until you start seeing bubbles coming from the yeast. Then add the rest of the flour until the mixture becomes doughy then knead well. If you need tips on kneading bread doughs, read this article http://www.thekitchn.com/bread-baking-tip-how-to-tell-w-156772. Set dough aside in an airtight container for one hour where it should double in size.

Once dough is ready, cut it into 6 equal pieces. Roll each piece into a footlong piece and twist into pretzel shape. Let it settle into shape for a few minutes before the next step. For twisting tips, check this video. I use the U-shape technique.

Preheat oven to 475 deg F.

In a saucepan, boil baking soda and water mix. Boil each pretzel for about 1 minute then remove and allow water to drip off. Place pretzels in a baking pan. Brush each one with egg yolk topping and sprinkle Kosher salt to taste. Bake in oven for 15 minutes until golden brown.
