Making Spanish or Mexican rice can be very complex or very simple to make. This recipe is a simple version that could be ready to serve in as little as 25 minutes. I like to eat it with baked beans and/or steamed vegetables.
In a skillet, brown the rice in a little bit of oil. Move the rice constantly to avoid burning. Once the rice is brown, add the tomato sauce and the stock. Bring to boil for 3-4 minutes then reduce to simmer and cover for 15-17 minutes.
Fluff with fork before serving. Enjoy it with baked beans (as shown in the picture), bacon, or any other garnish.
