Slow Cooked Rice and Chicken Casserole

This one is a simple recipe for a slow cooker. Usually, I make it in the morning and get going on my day. By the time my sister, aunt, or I come home in the late afternoon, we'll have a nice chicken dinner waiting for us.

  • 1 pound chicken cut into pieces
  • 1 1/2 cup white rice
  • 1/2 cup diced onion
  • 3 cans (10.5 ounce) cream of chicken and mushroom soup
  • 1 cube chicken bouillon dissolved in 1 cup boiling water
  • 1/4 teaspoon coarsely ground black pepper

In large bowl, combine all ingredients. Then place in a slow cooker. Cover and cook on LOW for 6-7 hours or until rice is tender and liquid is absorbed. Serves 6 to 8. Sometimes I add carrots, mushrooms, or even, bacon. Very yummy.
