Simple Chorizo Breakfast Burrito Recipe

Usually on weekends and holidays, I prefer to eat a hardy breakfast like a frittata. One of the easy ones to make is a breakfast burrito. The recipe is really easy and can be made within 15 minutes.

Ingredients to serve 1, adjust for more:

  • 1-2 eggs
  • 2 links chorizo
  • 1 jalapeno pepper (chopped)
  • 1/4 cup green onions (chopped)
  • hot sauce
  • seasoning
  • 1 piece of flour tortilla

Direction:

In a non-stick skillet, cook the chorizo until brown. I break the links open so that it's like cooking ground beef. Some folks like eating their chorizo as pork links. And that's ok, too. Once cooked, set chorizo aside then scramble the eggs. When eggs are finished, place the chorizo, eggs, jalapenos, and green onions on a tortilla. Season and add hot sauce to taste. Roll tortilla and serve.

I buy linked chorizos in 4 lbs packages from a local store but sausages can be substituted. You can also make your own chorizo just like here. The same goes for the flour tortilla. There are tortilla makers that you can buy so that you can make your own tortilla at home.
