Potato Chorizo Breakfast Casserole Recipe

Since chorizo is something I can easily get, I try to cook something with them as much as possible. I like how the spicy taste gives my food a little kick. The chorizo breakfast burrito is just one thing I make. Once in a while, I also make a Potato Chorizo Breakfast Casserole. It is really simple, provided that you can buy chorizo readily.

  • 4-6 Potatoes
  • 1 lb Chorizo Links
  • 8 Eggs
  • 1/2 cup Milk
  • 1 Onion (minced)
  • Green Onions (optional)
  • Sour Cream (optional)


Preheat oven to 400 deg F. Prepare a baking dish by greasing it.

Slice up the potatoes. Thinner slices are better to make sure that it gets cooked. Line up the bottom of the baking dish with potato slices.

In a pan, cook the chorizo by following the instructions that came with it. Let cooked chorizo cool down a little then slice them into thin circles. Layer the chorizo slices on top of the potatoes in the dish.

In a bowl, whisk the eggs and milk. Add the onion and mix. Pour the mixture onto the potatoes and chorizo in the dish.

Bake for 30-4o minutes or until the top becomes golden. Before serving, top the casserole with chopped green onions and/or sour cream.
