How to Make Low Carb Cabbage Rolls

This is a recipe for a tasty treat using cabbage as a wrap in a beef roll. In our family, we typically use rice paper wrapping for eggrolls. Cabbage wrap is definitely tastier to me. And I'm sure that it's healthier.

Using cabbage instead of rice paper makes this roll a low carb meal. Although I wouldn't know what the carb count is, I like the idea of not using processed rice products, which is what traditional rice paper wrappers are made from. Not to mention that ground beef provides the protein and mozzarella cheese is a tasty source of fat.

Cabbage Rolls

Recipe for 8 rolls:
  • 1lb ground beef
  • 1 white onion, diced
  • 1 green cabbage
  • 1 20 oz can tomato sauce
  • salt and pepper to taste
  • seasoning (optional)
  • grated mozzarella cheese
Direction:

STEP 1) Preheat oven to 350 deg F.

STEP 2) Peel whole leaves off the cabbage and blanch for 3 minutes in salted water. Drain, pat dry with paper towel and set aside.

STEP 3) In a frying pan heated to medium-high setting, add olive oil and brown the onions. Increase heat to high and add ground beef and brown. Stir to combine diced onion and ground beef. Mix salt and pepper to taste as the beef is cooking. Add seasonings as well. Dried basil works for me. Also, you don't have to completely cook the ground beef since it will cook in the oven.

STEP 4) Prepare an oven-safe baking dish by spooning and spreading a layer of tomato sauce at the bottom.

STEP 5) Begin making the cabbage rolls by putting a spoonful of beef on a cabbage leaf. Roll it up and place into the baking dish with seam-side down. Repeat process until you're out of beef which is about 8 rolls. Cover rolls with the rest of tomato sauce. Bake in oven for 30 minutes.

STEP 6) Remove baking dish from oven and sprinkle as much or as little grated mozzarella cheese. Then set oven to broil and place baking dish in broiler for another 5-10 minutes or when cheese begins browning.

Serve with simple green salad and enjoy.
