Low Carb CasseroleDirection
- 1 lb bacon, cooked and chopped
- 1 cup chopped onion
- 1 cup chopped spinach
- 1 cup chopped broccoli
- 1 lb shredded cheese (any mix for your taste)
- 1 dozen eggs
Preheat oven to 325 deg F.
Sautee onion, spinach and broccoli. It's ok to use bacon fat. Add salt & pepper to taste if needed. Drain when finish. Place in a bowl and mix thoroughly. Then set aside.
Using a cold stick of butter, grease up baking dish.
In a large bowl, beat eggs.
Layer the casserole beginning with 1/3 eggs, then spread out 1/3 vegetable mix, then spread out 1/3 cheese. Repeat until all ingredients are used up. Add more cheese to cover top if necessary.
Bake for 40 minutes.
Serve and enjoy. Leftovers make fantastic breakfast.
