Easy Strawberry Shortcake Recipe


Here's a delightful classic treat. Always fun to celebrate 4th of July and summer with a strawberry shortcake. This recipe is from a fellow Pinterest enthusiast, Eugenie Kitchen (https://www.pinterest.com/eugeniekitchen/). What's even better is that she has a video that makes it easy to follow the recipe.

Strawberry Shortcake

Ingredients (for 8-9 shortcakes):
  • 1/2 cup milk (120 ml)
  • 1 egg
  • 3 cups all-purpose flour (375g)
  • 3 teaspoons baking powder
  • ½ cup granulated sugar (100g)
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold, cubed (113g)
  • Additional beaten egg for brushing
For topping:
  • ½ pound strawberries (225g)
  • 2 tablespoons granulated sugar
  • a few drops of pure vanilla extract
  • Whipped cream

Directions:

Make the Shortcakes

Preheat oven to 390 deg F. Prepare a baking sheet with parchment paper.

Wash and cut strawberries and place in a med-large mixing bowl. Add 2 tablespoons sugar. Mix and set aside.

In a separate large mixing bowl, add milk and egg. Beat to combine.

In a food processor, add flour, baking powder, 1/2 cup sugar, salt and butter. Pulse until the mix is like fine sand. If you don't have a food processor, you can use a large bowl and a hand mixer.

Add flour mixture to the milk/egg bowl. Fold until just moistened.

On a clean surface, lightly sprinkle flour so that dough will not stick. Place dough on the surface and flatten it till about 1-inch thick.

Using a pastry cutter, stamp out a piece of the dough and lay it on the baking sheet.

In a small/med bowl, lightly beat a whole egg. Glaze each dough with egg on top with a brush.

Bake for 13 minutes or until golden brown. Remove and cool on a wire rack for 5 minutes.

Put it together.

For each shortcake, cut horizontally across the side at 1/2 inch thickness. There should be a top and a bottom pieces.

Carefully separate water from strawberries into a bowl or cup. Add a few drops of vanilla extract into the water and mix.

Brush the inner sides of the top and bottom pieces of the shortcakes with strawberry water. Arrange the strawberries on the bottom pieces. If desired, spread whipped cream on top of the strawberries.

Add shortcake top to cover. Decorate with whipcream and strawberry on top as desired.

Serve and enjoy.
