Taco Salad with Ground Turkey, Guacamole and Crispy Cheese Chips

This is a simple salad recipe that makes a fantastic low carb light summer meal. I'm using ground turkey but ground beef, baked chicken breasts or other meat are also good. Vegetarian substitute for meat could be tofu, potatoes, or mushrooms.

Turkey Taco Salad

Ingredients:
  • 1 lb ground turkey
  • 1 packet taco seasoning
  • 1 jar salsa
  • guacamole (recipe here)
  • romaine lettuce
  • sour cream
  • 1/2 slice tomato, seeded (use more if preferred)
  • cheese chips (recipe here, as much as you want) or shredded cheddar cheese
Direction:

Cook ground turkey any way you prefer. This video gives a good tip on how to cook and season ground turkey for tacos. Of course, it's Mexican-flavored. I basically do the same thing but use taco seasoning and jarred salsa from a local carcineria.


The cheese chips are a personal touch. But shredded cheddar cheese is a popular garnishing for tacos. Also, use more tomatoes if you have them. I just used a left over piece.
