Super Easy Mashed Cauliflower Recipe

Been reading up on more low carb recipes and meals lately. Here's one that I found a delight since I'm partial to dishes to make with potatoes. Cauliflower contain much less carb than potatoes and is a staple of various low carb meals that are so popular nowadays. For me, at this point in time in my life, it's about the taste. And when done properly, mashed cauliflower is heavenly.

Mashed cauliflower is easy to make and healthy for you. A fantastic low carb alternative to mashed potatoes.

Mashed Cauliflower

Ingredients:
  • 1 bag frozen cauliflower
  • 1 tbsp butter
  • 1 tbsp heavy whipping cream
  • salt & pepper to taste

This is the video that I followed since I prefer a little bit of chunkiness with my mashed potatoes (or mashed cauliflower in this recipe). There are various instructions out there using a food processor, but I don't want it smooth or whipped.


Basically, what you do is boil cauliflower in a pot until it's easily separated by a fork. Then drain and press out water using a colander. Put cauliflower back into pot and mash using a potato masher while adding butter and whipping cream. Add salt and pepper to taste.

Very simple. It's like making mashed potatoes, except it's mashed cauliflower. Serve it on holidays such as Thanksgiving and/or Christmas dinners or just make it for yourself and your family every now and then. It should be something to try.
