Healthy Snacks Roasted Chickpeas Recipe

Roasted chickpeas are healthy snacks easily made at home. All you'll need is a can of chickpeas (a.k.a. garbanzo beans), some olive oil and seasoning and you're good to go (or no seasoning for plain serving). Great source of fiber and protein. Completely vegan.

Just like quinoas, chickpeas, also known as garbanzo beans, are low fat, yet, loaded with protein. These legumes should be considered if you're eating healthy. They also go well with soup and salads.

Oven Roasted Chickpeas

Ingredients:
  • 1 can Chickpeas (drained, rinse, skinless)
  • 1/2 cup Olive Oil
  • Seasoning
Direction:

Preheat oven to 400 deg F.

Once the chickpeas have been prepped properly, e.g. drained, rinsed, and skin completely removed, pour them in a bowl then mix with olive oil. Mix thoroughly until all chickpeas are well covered with oil. Add more oil if necessary.

Lay out chickpeas on a cooking sheet. Season to taste. We use garlic, salt, black pepper, and paprika.

Cook in oven for 15 minutes, flip the best you can, then cook for another 15 minutes.

Let cool a little before snacking.
